- 2 oil (good tbsps)
- 1 onion (large, roughly chopped)
- 1 sweet potato (roughly chopped)
- 3 carrots (roughly chopped)
- 1 red pepper (roughly chopped)
- 3 sticks celery (roughly chopped)
- 150 grams mushrooms (sliced)
- sweetcorn (sprinkle of)
- 3 cloves garlic (peeled but not chopped)
- 1 bunch parsley (stalks on, tied together)
- 1 bunch fresh thyme (and rosemary, finely chopped)
- 1 1/2 pt. chicken stock (good quality, home-made if possible!)
- 3 chicken thigh fillets (cooked, I prefer thigh fillets but any part of the chicken will do fine, shredded.)
- 2 tsp. ground ginger
- 1 tsp. chilli flakes
- salt
- pepper
- 1 handful spinach
- 1/4 lemon
