- 1/2 cup almond meal (almond flour will probably work, but I liked the texture of the coarser almond meal in this)
- 1/2 cup hemp seed (raw, I used Manitoba Harvest Shelled Hemp Hearts)
- 1/2 cup grated Parmesan cheese (finely-)
- 1/4 cup flax seed meal
- 1/4 cup flakes (nutritional yeast)
- baking powder (1/2 tsp.)
- seasoning (1/2 tsp. Spike, optional but good; can substitute any all-purpose seasoning mix)
- salt (1/4 tsp.)
- 6 eggs (beaten)
- 1/2 cup cheese (reduced-fat cottage)
- 1/3 cup green onion (thinly sliced)

I have used this recipe many times. I have made it following the recipe verbatim, but usually I add chopped vegetables such as onion, mushrooms, colored bell peppers sauteed in a frying pan before adding with the wet ingredients. Sauteed spinach works well, too. . I did not have hemp hearts today so I substituted half the hemp amount in chia. Sometimes I sprinkle a little cheese on top of each muffin before baking. We have a garden overflowing with chives so I use those instead of the green onions. I have been eating low carb for two years now and these muffins work well for my breakfast with my morning coffee.
