In my house i have many diet constraints. Cake or desserts have to be dairy free, nut free, sugar free, egg free, and gluten free. Phew! This was a big hit! I took out the agave syrup and added same amount of "Sugar Free" to the recipe. I didn't put any nuts. Kept the cashews as those are seeds, not nuts. Didn't put raisins or cranberries either cuz I didn't have them available. Turned out great! Will make this again. Next time may add pumpkin puree and all spice....YUMMY! I made this recipe as a bunt cake not cup cakes. smaller portions and moist. Cup cakes can dry out quick. I also made the cake the day before so the flavours and spices have time to incorporate while in the fridge. I frosted the cake before hand as well. just delicious. Thank you again.

These were so delicious. I used almond flour and ground flax as a substitute for the ground cashews. I am going to make more tomorrow for my grandchildren. Yum.
