I substituted the confectioner's sugar with 3/4 cup confectioner's sugar and 1-1/4 cup coconut sugar and 1/4 tablespoon of vanilla powder sugar. To be honest the amount of sugar seems excessive for this recipe. On top of the batter on some cookies I sprinkled chopped walnuts and chocolate chips for fun. I baked them in muffin tin greased with coconut oil and rice flour and in a convection oven (microwave size). It took a long time to fully bake them all the way to the center.
