These were delicious! My favorite part was the chewy texture. They were so oily when putting them on the pan, I thought they would spread all over the place. They held up really well and looked like regular cookies, though. I used a mixed nut butter from Trader Joe’s instead of almond butter. Because it is more oily than almond butter and I was a little short, I added 1/4 cup almond flour. This turned out to be a great substitute for almond butter. The mixed nut butter is also sweeter than almond butter, so next time I’ll cut the sugar a little. My family can eat peanuts, so I’m excited to make another version for them later with peanut butter. I’ll also try it with almond butter.
