  • 3 1/2 ounces cookies (Florentine, roughly chopped, plus extra to serve)
  • 2 ounces candied cherries (roughly chopped)
  • 1/2 cup sliced almonds (toasted)
  • 1 1/4 cups heavy cream
  • 1/4 cup granulated sugar
  • 3/4 cup greek yogurt

    Directions

    1. Combine chopped Florentine cookies, cherries and sliced almonds. Set aside 4 tbsp mixture.
    2. Whip heavy cream and sugar to soft peaks. Fold into Greek yogurt. Add fruit and nut mixture and mix until just combined. Distribute between 6 serving glasses. Sprinkle with reserved fruit and nut mixture and serve with extra Florentine cookies.
