- 1 Tbsp. refined coconut oil (and a glug of liquid, coconut oil gives you a similar mouthfeel to traditionally used butter)
- black pepper
- salt
- 1 medium onion (sliced)
- 6 button mushrooms (with stem, sliced, about 2 cups)
- 1/8 cooked beetroot (large, grated finely, I had leftovers but you can also use carrot as a sweetener)
- 440 mL guinness (can of, or other dark, sweet beer)
- 2 cups water
- 2 bay leaves (medium dried)
- 1 tsp. dried thyme
- 1/2 stock cube (big veggie)
- 2 tsp. marmite (or vegemite)
- 1 slice white bread
- 1/2 Tbsp. Dijon mustard (I used 1/2 tablespoon which was a bit too bitter for me)
- 1 Tbsp. raw cane sugar (or more, depending on beer and amount of mustard used)
