- 1/2 onion (peeled and minced)
- 1 red bell pepper (seeded and diced)
- 1 chayote squash (chopped)
- 15 oz. diced tomatoes (roasted)
- 1 liter water
- salt
- ground black pepper
- 2 zucchinis (chopped)

Directions
- Place a large pot on the stove and pour in the olive oil. Add the onion and bell pepper and cook for 5 minutes or until the onion becomes transparent.
- Add the squash, tomatoes, and water. cover the pot and cook at medium heat for 15 minutes.
- Add a pinch of salt and black pepper and the zucchini. Cook for another 5 minutes. Serve hot.
