- 500 grams kway teow (flat rice noodles)
- 16 fishballs (large, from the wet market or those packed in water)
- 1 handful lettuce leaves (sliced thinly, I used endives in the pic above, but you should really use lettuce!)
- 1 liter water
- 1 piece ginger
- 3 Tbsp. stock (dried ikan bilis, anchovies or use 2 ikan bilis, cubes)
- spring onions (optional)
- fried shallots (optional)
- light soya sauce (to taste, about 1 tablespoon)
- 1 dash white pepper
- 1 kway teow
- 2 7/8 fishballs
- 1/2 stock (for ikan bilis/, cubes)
