- 4 Tbsp. fresh lime juice
- 2 Tbsp. vegetable oil
- 2 Tbsp. soy sauce
- 2 Tbsp. mayonnaise
- 1/2 cup low fat yogurt
- 2 Tbsp. fresh lime juice
- 1 chipotle chile (in adobo sauce, finely chopped)
- 1 garlic clove (finely chopped or pressed)
- salt
- 1 bell pepper (red, yellow, and/or orange, deseeded and chopped into 1/4-inch squares)
- 1/2 red onion (small, finely chopped)
- 1 jalapeno pepper (de-seeded and diced)
- 2 mangoes (just-ripe, peeled and chopped into 1/2-inch square chunks)
- 1 handful cilantro (washed, dried, de-stemmed, and chopped)
- 2 cloves garlic (minced)
- 1 lime
- salt (to taste)
- 12 corn tortillas (warmed)
