- 1/2 cup cornmeal
- 2 tsp. parsley
- 1 1/2 tsp. lemon pepper
- 2 tsp. ground cayenne pepper
- 3/4 tsp. paprika
- 2 tsp. salt
- 1/2 tsp. garlic powder
- 1 tsp. white sugar
- canola oil
- 2 lemons
- 1 cup cheese (cheddar/monterey jack cheese)
- corn tortillas (taco sized)
- 2 avocados (optional)
- 1/2 cup mayonnaise (I use a light version)
- 1/2 cup sour cream (I use a light version)

I made this recipe and I have to admit, I felt like I was in Tijuana again! Delicious, I added jalapeno peppers to the mix just for some added heat!
