- 1 lb. cod (Firm Fleshed White Fish, works well, but tilapia or any white fish will work in a pinch)
- 2 cups yellow corn meal
- 2 large eggs (Beaten)
- vegetable oil (For Frying)
- salt
- pepper
- 1 seasoning (Chili Lime, from Trader Joe's, but in a pinch a mild, will work)
- 4 1/2 feet tortillas (" mini, but any taco sized tortilla will work)
- 1 cup sour cream
- 1 lime (Zest and Juice)
- 1 pt. cherry tomatoes
- 1 mango (Large, Diced)
- 2 jalapenos
- 1/4 cup cilantro stems (removed and roughly chopped)
- 1 lime
- salt (To taste)
- 1/2 cup red cabbage (Shredded)
- 1/2 cup green cabbage (Shredded)
- 1/2 cup shredded carrots
- 1/2 cup daikon (Shredded, or Radish)
- 1 Tbsp. kosher salt
- 1/4 cup rice vinegar
- 1 Tbsp. mustard seed (Whole)
- 1 Tbsp. celery seed
