- 2 cod fillets (skinless and boneless)
- 1 pinch salt (and pepper)
- 80 grams salad leaves (approx 2 cups baby)
- 200 grams mixed beans (1/2 of a 14oz tin, these can be from a tin, washed and drained)
- 1 avocado (ripe, peeled and chopped)
- 1/8 red cabbage (finely chopped)
- 1/4 red onion (peeled and finely sliced)
- 1 roasted red pepper (from a jar, sliced)
- 10 cherry tomatoes (sliced in half)
- lime wedges (to serve)
- Greek yogurt dressing
- 5 Tbsp. greek yogurt
- 1 tsp. honey
- 1 pinch salt
- 1/2 garlic (a clove of, peeled and minced)
- 1 tsp. lime juice
- 3 Tbsp. fresh coriander (chopped)
- 1 Tbsp. water

I love it, but the rest of my family hated the dressing. Pretty good for a solo eater, not so much for elderly family members.
