- 4 sole fillets (skinned if you prefer)
- 1 bag spinach (washed and steamed)
- butter
- 1 onion (small, chopped)
- 50 grams Parmesan cheese (grated)
- 2 cloves garlic (crushed)
- lemon juice

Directions
- Preheat oven 200C/400F/Gas 6. Fry onion in some butter until soft (with a tsp of finely chopped chilli if required).
- Mix onion, cooked spinach and cheese together.
- Divide the spinach mixture between the fish and roll up or folder over.
- Melt some more butter, stir in crushed garlic, and brush over the fish.
- Sprinkle with some freshly squeezed lemon juice and dust with Parika. Bake for 15-20 minutes.
