- 4 tilapia fillets (approximately 6 ounces each or other fresh fish)
- 3 Tbsp. olive oil (divided)
- 3 garlic cloves (thinly sliced)
- salt
- freshly ground pepper
- paprika
- fresh herbs (I used parsley and some basil. Use whatever you prefer.)
- 1 yellow squash (sliced)
- 1 zucchini (sliced)
- 1/2 cup cherry tomatoes (cut in half)
- 4 peppers (small, cut in half and seeded)
- 6 green onions
- 1 lemon (1/2 thinly sliced, the other half reserved for juice)
- 1/4 cup green olives
- 1/4 cup Kalamata olives
- 2 Tbsp. capers
- fresh lemon juice
