  • 3/4 cup basmati rice (or any long grain rice)
  • 1 pound white fish fillet (such as perch, cod or haddock, cut into cubes)
  • 2 tablespoons lemon juice
  • 3 tablespoons butter
  • 1/2 pound peppers (mixed, deseeded and cut into strips)
  • 2/3 cup scallions (sliced)
  • 1/2 cup vegetable stock
  • 2 tablespoons curry paste
  • lemon balm leaves (for garnish, can also substitute bergamot or mint)

    Directions

    1. Cook the rice in 1 1/4 cup of boiling salted water for 20 mins. Drizzle the fish with the lemon juice and season with salt.
    2. Melt 1 tbsp of butter in a pan and sauté the peppers for 2 mins. Add the scallions and cook for 1 more min. Season with salt and black pepper and remove from the pan.
    3. Pat the fish dry, and melt the remaining butter in the saucepan. Cook the fish for 2 mins. Add the stock, curry paste, peppers and scallions and simmer for 2 more mins.
    4. Drain the rice and arrange on plates with the fish and curry. Garnish with herbs.
