- 1 carrots (scrubbed and coarsely chopped)

- water (to just cover the bones in the pot)
- 1 bay leaf
- 2 whole cloves
- 2 tsp. peppercorns
- 1 Tbsp. bouquet garni
- 1 handful fresh parsley
- 5 stems fresh thyme
- 7 lb. fish (carcasses or heads from large non-oily fish such as halibut, cod, sole, rockfish, turbot, or tilapia (Non-oily fish is necessary because the fish oils in fatty fish such as salmon become rancid in cooking).)
