- 3 cups mirepoix (diced, equal parts onions, carrots, and celery)

- 1/4 tsp. red pepper flakes
- 1/4 cup sun-dried tomato pesto (homemade or store-bought)
- 4 cups chicken stock
- 1 tsp. Italian seasoning
- 15 oz. red kidney beans, rinsed and drained
- 28 oz. diced fire roasted tomatoes
- 1 cup zucchini (EACH: diced, AND cut green beans)
- 9 oz. refrigerated tortellini (I used the cheese variety, see notes first)
- 1 1/2 cups baby spinach (packed)
- grated Parmesan (for serving)
