Didn't have Fenugreek, so I subbed in some maple syrup, which worked well. I don't marinate the chicken. I use bone in chicken things, dump all the marinade ingredients in with the tomato mixture and let it simmer. At the end, I pull out the chicken, let it rest, debone and put the meat back in the sauce. Added (in addition to what is called for) 1t each tandoori and garam masala at start of cooking. (I'll add up-to another teaspoon of each at the end to get it where I want it to taste.) Just taste it and adjust to your preferences.
