- 250 grams cherry tomatoes
- 4 Hellmann''s Light Mayonnaise (dollops*)
- 2 aubergines
- 1 green pepper
- 2 Tbsp. parsley

Directions
- Preheat the oven to 180°C.
- Cut the aubergines in half and bake them for around 30 minutes in the oven at 200°C.
- Scoop out the innerside of the aubergine and keep the outer.
- Mix the parsley and mayonnaise with the aubergine, the tomatoes and pepper.
- Fill the outside of the aubergine with the mixture and bake in the oven for 20 minutes.
