- 500 grams tofu (hard, sometimes called extra firm tofu)
- 3 Tbsp. vegetable oil
- 8 cloves garlic (peeled and sliced)
- 1 pineapple (small, about 1 1/2 - 2 cups chopped)
- 1 1/2 cups vegetable broth
- 1/4 cup white vinegar (I used white wine vinegar, you can use palm vingear, coconut vinegar or any other variety of white vinegar)
- 1/3 cup light soy sauce
- 2 bay leaves
- black pepper (Generous grinding of)
- 220 grams bamboo shoots (if you can find fresh shoot, even better!)
