- 16 oz. filet mignon steaks
- freshly ground black pepper
- kosher salt
- 2 bacon strips (+ more bacon if your filets are larger)
- 2 Tbsp. vegetable oil
- 2 Tbsp. extra virgin olive oil
- 1 lb. mushrooms (2- 8 ounce packages, such as Cremini; sliced)
- 1 Tbsp. minced garlic (or finely chopped)
- 1 sprig fresh rosemary (finely chopped)
- 1 1/2 cups pinot noir (Gallo’s)
- 3 Tbsp. beef demi-glace (prepared, see above)
- 2 Tbsp. unsalted butter
