- 1 1/2 cups rice ({jasmine is my favourite for this recipe})
- 2 cloves minced garlic
- 1/2 cup shallots (chopped)
- 2 tsp. extra-virgin olive oil
- 1 1/2 cups chicken broth ({may need a 1/4 cup extra, all depends on your heat})
- 10 oz. whole kernel corn (} package frozen sweet, thawed)
- 1 cup carrots (diced)
- 15 oz. black beans (} can, rinsed and drained)
- 1 cup chopped tomatoes (with no seeds)
- 1/2 cup chopped fresh cilantro
- 1 Tbsp. fresh lime juice ({optional, but recommended})
- 1 dash salt ({if needed})
