- 1/2 cup semi pearled farro (uncooked)
- 2 tsp. olive oil
- 2 chicken sausages (spicy, I recommend these, diced)
- 1 bell pepper (large, diced, I used a mix of red and yellow peppers because that’s what I had on hand, but any color will do.)
- 1/2 Spanish onion (minced)
- 2 cloves garlic (minced)
- 14.5 oz. black beans (drained and rinsed)
- 28 oz. fire roasted tomatoes (crushed, Yes, you can use regular crushed tomatoes if you can’t find fire roasted. Duh.)
- 1 1/2 chipotle peppers (canned in adobo, minced)
- 1 1/4 tsp. ground cumin
- 3/4 tsp. paprika
- 3/4 tsp. dried oregano
- 5 large eggs
- 1/4 cup cotija cheese (crumbled)
- 2 Tbsp. fresh cilantro
- avocado (Diced, or guacamole)
- corn tortillas
