This is the only dish so easy and satisfying that it makes it into our weekly rotation. I’m on a low histamine diet and love the fact that it has no tomato products. The thyme and the texture of the rice and beans make up for it. We use adzuki beans and long grain brown rice in this dish. Cooking the beans (if using dried) and then the entire dish in an Instapot makes this super fast.
