- 2 cups mushrooms (we used shiitake but maitake was my first choice, cleaned and sliced)
- scallions
- chives
- kosher salt
- freshly ground black pepper
- 1/4 cup chicken stock (good quality)
- heavy cream (drizzle of)
- pecorino romano (for serving)
