  • 1 1/4 cups heavy cream
  • 5 1/4 ounces blue cheese (crumbled)
  • 1/4 cup fresh chives (finely chopped, to serve)
  • 1/3 cup walnuts (coarsely chopped, to serve)

    Directions

    1. Cook pasta in boiling, salted water until al dente. Drain.
    2. Meanwhile, heat cream and blue cheese over low heat, stirring, for 4-5 mins, until cheese melts and sauce thickens slightly.
    3. Toss pasta with sauce and season to taste. Sprinkle with chives and chopped walnuts. Serve mixed greens on the side.
