- 5/16 cup rolled oats (optional)
- 10 oz. frozen chopped spinach (thawed and squeezed to remove excess water, about 1 cup after squeezing)
- 1/4 cup dried cranberries
- 1/4 cup freshly chopped parsley
- 1 Tbsp. fresh thyme (chopped, or 1 tsp dried thyme added to puree)
- 1 whole whole wheat pie crusts (pastry, thawed)
- 1 tsp. tamari
- 2 Tbsp. walnuts (chopped, for topping, no need to toast beforehand)
- 1 1/2 cups fresh cranberries (rinsed)
- 1/2 cup pure maple syrup
- 1/4 tsp. sea salt

I can't say anything about the chocolate pumpkin pie, but I did make this chickpea tart last year. Too bad the recipes are combined here! The chickpea tart is flavorful, unique and came together quickly. It was nice to have a vegan main dish not masquerading as meat, and prettier than a loaf. I meant to make it again soon after, but forgot. The approach of thanksgiving had me seek out the recipe again. I'll update my review if I have different thoughts this year!
