- 4 egg whites
- 2 egg yolks
- 1 stalk celery (diced)
- 1 tomato (diced)
- 1/4 onion (diced)
- 1/2 cup black beans (whole, in their broth)
- 3 slices turkey ham (cubed)
- salt (and pepper)

Directions
- Brown the turkey ham slightly, for 2 minutes, in a skillet with a tsp. of vegetable oil. Add the onion and saute for 1 minute on medium heat, then add the celery, tomato and onion. Cook for 5 more minutes.
- Mix the eggs in a separate bowl with a fork with salt and pepper and add them to the vegetables.
- Add the beans and little more salt to taste and carefully mix in wide strokes so that the eggs remain fluffy.
- Serve with flour tortillas and spicy salsa verde.
