- 1 cup oats (groats, whole oats– you could substitute steel-cut oats, if necessary)
- 1 cup urad dal split (hulled black gram, moong dal, split, hulled mung beans, or yellow split peas)
- 1 tsp. fenugreek seeds (NOTE: This is a fermentation aid, but, if you can’t find them, omit.)
- water
- 2 1/2 cups water (mixed soaking, from oats and dal)
- 1 tsp. salt
- oil (for greasing the pan)
- onion (thinly-sliced)
- vegetables (of your choice, thinly-sliced, could include: sweet potato, cooked potato, squash, cabbage, kale or other greens [dry], halved grape tomatoes, chiles, any color bell peppers, halved grape tomatoes, grated carrots, grated coconut, chopped cilantro, green onion, or leeks, etc.)
- non-dairy cheese (shreds)
- dal (Your favorite, or sambar)
- raita
- chutney
- chopped fresh cilantro
- basil
- mint
