- 1 lb. chili peppers (sliced in half, about 6-7 cups see notes)
- 1 carrot (thinly sliced, do not peel)
- 6 garlic cloves (cut in quarters)
- 2 shallots (sliced, or ½ an onion)
- 1/4 cup apple cider vinegar (more to taste)
- sugar (to taste, optional)

The sauce turned out well! We used a blend of peppers. It definitely has a "Kim Chi" type flavor. Looking forward to experimenting with different peppers, fruits, vinegars and herbs.
