Description

Refreshing salad. Fabulous with Pork, Chicken, Veggie Burgers, Tofu and Seafood. Use any apple your heart desires, and add walnuts or pecans if you want to up the protein level.

Ingredients

  • 1 apple (thinly sliced)
  • 1 fennel bulb (Small, thinly sliced on a Mandolin)
  • 1 shallot (large Green, diagonally sliced)
  • 2 tablespoons lemon juice
  • 1/4 cup mayonnaise
  • 1 teaspoon lemon juice
  • 2 tablespoons light cream

    Directions

    1. Mix the apple and fennel in water acidified with the lemon juice to stop browning
    2. Mix mayonnaise with light cream & 1 tsp of lemon juice - to your taste
    3. Drain salad and mix with Mayonnaise and Shallots
