    I used cod instead of chicken thighs and altered the cooking time for the cod as it cooks much quicker. I also added a couple of handfuls of baby spinach at the end. It was really yummy!

    Excellent recipe. I used more fennel (2 bulbs instead of one), and included 100 g mushrooms plus about 25g oregano. Sadly had to omit the green olives because mine had turned in the fridge. Also used minimal capers - I definitely could have used more. I considered adding a couple anchovies (in oil) but forgot at the last minute. It's easy to change the flavor in this recipe via adjustments in the amount of basil, olives, capers etc. Inexpensive and yummy

    It was very good. I love most anything with olives in it. I used chicken breast instead of the thighs due to availability and it turned out delicious! Everyone loved it!

    Wow, made this tonight and what wonderful flavors!!!!! My husband went nuts over this recipe. The only thing I added was about a half cup of dry white wine. I will definitely make this again and will serve this to company. Five stars!!!
