- 2 eggs (separated)
- 1 cup dessicated coconut
- 1 cup plain flour
- 2 tsp. baking powder
- 1 pinch salt
- 1/4 cup milk (I used 3/4 water and 1/4 cream)
- 1/4 cup sour cream
- 3/4 cup feijoa (flesh, scooped out and roughly chopped in the measuring cup so you don’t lose too much liquid)
- 200 mL coconut cream (shake the can first!)
- 1 Tbsp. caster sugar
