  • 12 ounces fresh fava beans (removed from pods)
  • 4 tablespoons olive oil
  • 4 zucchini (thickly sliced diagonally)
  • 1 tablespoon white wine vinegar
  • 1/4 cup chopped walnuts

    Directions

    1. Cook the fava beans in a saucepan of boiling water for 2-3 mins, until tender. Drain and quickly plunge into a bowl of iced water to prevent further cooking. Set aside to cool. Drain and peel off the outer skins.
    2. Heat 1 tbsp of oil in a large skillet on medium heat. Cook the zucchini, stirring occasionally, for 5 mins, until tender and slightly browned. Add the fava beans and season. Cook for 1 min, until heated through.
    3. Whisk the vinegar and remaining 3 tbsp oil in a small bowl. Pour over the vegetable mixture and toss to coat. Transfer to a serving bowl and sprinkle with walnuts to serve.
