- 1 handful lettuce (any, cut to same size as cucumbers)

- 1/2 green chilli (chopped fine, optional)
- 1 handful mint leaves (finely chopped)
- 1 handful flat leaf parsley (finely chopped)
- 1 lemon
- 1 lemon (2-3 tbsp)
- 2 Tbsp. extra-virgin olive oil (to taste, I prefer less for a more piquant dressing)
- 1 garlic clove (small)
- 1/2 tsp. salt
- freshly ground black pepper
- 1 Tbsp. sumac
