- 1 cup brown lentils (whole, . Wash and drain the lentils. French puy lentils would work great too)
- 1 onion (finely chopped)
- 6 cloves garlic (minced)
- 2 medium tomatoes (diced)
- 1/2 habanero pepper (deseeded and minced, habanero is one of the spiciest peppers out there, so reduce the amount to a quarter or an eight of a pepper if you can't stand too much heat)
- 2 tsp. cumin powder
- 2 tsp. thyme (minced)
- 1/2 cup cilantro (minced)
- 1/4 cup garlic chives (optional, minced)
- salt (to taste)
- 1 cup flour (whole-wheat, use durum flour if you can --it makes softer tortillas)
- 1/2 tsp. salt
