  • 14 1/2 ounces diced tomatoes (cans, salt free, see note above)
  • 15 ounces red kidney beans (cans low-sodium light or dark, drained)
  • 1 bell pepper (small, chopped small, 1/2 cup or so. I use green, but any kind is fine)
  • 1 onion (small, chopped small, 1/2 - 3/4 cup, use less if you're not an onion fan)
  • 1 packet taco seasoning mix (mild, any brand, 1.25 ounces or 2-1/4 tablespoons)
  • 1 1/2 teaspoons cumin
  • 1 teaspoon salt (see note above if using salted canned tomatoes)
  • 1/8 teaspoon garlic powder
  • 1 teaspoon chili powder (more if you like it hotter)
