- 8 oz. bone broth (beef, or can substitute additional beef stock)

- 2 Tbsp. low sodium soy sauce
- 2 tsp. hoisin sauce
- 1 Tbsp. fish sauce
- 1 small yellow onion (quartered)
- 10 slices fresh ginger (¼” thick)
- 1 Tbsp. whole black peppercorns
- 1/2 tsp. fennel seeds
- 1/2 tsp. corriander seeds
- 4 pieces star anise
- 1/2 tsp. whole cloves (or substitute 1/8 tsp. ground)
- 1 whole cardamom pod (or substitute 1/8 tsp. ground)
- 1 whole cinnamon stick (or substitute ¼ tsp ground)
- 2 cups mung bean sprouts
- 8 oz. baby bella mushrooms (sliced)
- 1/2 cup green onions (chopped, whites and greens)
- 1/2 cup cilantro leaves (fresh)
- 1 jalapeno (large, finely sliced)
- 1/3 cup chopped nuts (coarsely, cashew, almond, or peanut)
