- 1 lb. wild mushrooms (fresh, cleaned & sliced into large pieces)
- 3/4 cup extra virgin olive oil (Tbsp, divided)
- coarse sea salt
- freshly ground pepper
- 1 shallot (finely chopped)
- 1/3 cup sherry vinegar
- 1 tsp. thyme (chopped)
- 4 1/2 cups chicken stock
- 0.5 oz. dried porcini mushrooms
- 1 medium onion (coarsely chopped)
- 1 garlic clove (minced)
- 1 bay leaf
- 1/3 cup flat leaf parsley (chopped)
