Forgot the cucumbers :-( next time tho. I added feta cheese and used Kalamata olives. I just love farro in this salad it adds so much flavor and texture.

After cooking farrow for 25 minutes, in salted water, I chilled it for a few minutes before
adding veggies. In addition to the items on the recipe I added a few scallions and parsley
since I didn’t have any basil. I used a lemon, herb olive oil vinaigrette as the dressing.
Big hit with my husband.
