- 2 medium zucchini (grated, makes about 2 1/2 cups)
- 1 tsp. sea salt
- 1 egg
- 2 Tbsp. flour (your favorite, I use cassava to keep this recipe W30 and Paleo)
- 2 tsp. arrowroot powder (or cornstarch if you aren't Paleo?w30)
- 1/2 tsp. freshly ground pepper
- 6 basil leaves (chopped)
- 3 Tbsp. olive oil
- 3 large egg yolks
- 1 Tbsp. lemon juice
- 1 pinch red pepper flakes
- 1/2 tsp. Dijon mustard
- 1/2 cup melted butter (warm, or ghee, use ghee if w30)
- 3 eggs
- 1 Tbsp. white vinegar

this recipe is absolutely delicious. I really only used it for the Hollandaise sauce recipe and poaching directions, I did not make the zucchini fritter (which is why i couldn't accurately give 5 stars). It is so easy and so enjoyable I had to leave a review. PS. I topped mine with a little blank truffle and black pepper
