Eggs fluffed up with Hellmann's mayonnaise, mixed with ham and mushrooms

Ingredients

  • 4 eggs
  • 2 Hellmann''s Light Mayonnaise (dollops*)
  • 2 tablespoons olive oil
  • 1/2 red pepper
  • 1/2 onion
  • 100 grams mushrooms
  • 1 tomato
  • 100 grams ham

    Directions

    1. Cut the ingredients into cubes. Sauté them in a fry pan with the oil. When cooked,set aside.
    2. In a bowl, beat the eggs and whisk in the mayo. Add the vegetables into the bowl and mix well.
    3. Pour the mixture back into the pan and cook the omellette as usual, making sure it gets a nice golden colour on both sides.

    Absolutely loved this omelette. Preparing my husband for London Marathon and on high protein, high fat diet with no carbs this week. Found it filling and tasty.
