Hail the beginning of spring and say goodbye to the cold of winter with this fresh edamame falafel. Seasoned with cumin and lemon zest, these vegetarian falafel balls feature edamame and are the perfect filling for a pita. Serve with hummus, greek yogurt, and your favorite pita toppings.

- 1 onion (diced)
- 2 garlic cloves (diced)
- olive oil
- 1 Tbsp. cumin
- 1 tsp. ground coriander
- 1/2 pepper
- 500 grams beans (edamame)
- 1 bunch parsley
- 1 lemon juice (and zest)
- 2 Tbsp. flour
- 2 Tbsp. bread crumbs
- buns (pita)
- hummus
- lettuce
- sprouts
- mint
- yoghurt

Directions
- Saute onion and garlic in olive oil.
- Add cumin, coriander, and pepper, and cook until a nice smell becomes easily perceptible.
- Mix the edaname beans with the parsley and lemon juice. Add to onion mixture. Mix well.
