- 2 Tbsp. sweetener (sticky, like date syrup or Steen’s syrup)
- 2 Tbsp. unsweetened applesauce
- 1 Tbsp. cumin
- 1 Tbsp. turmeric
- 1 Tbsp. tahini
- 30 oz. chickpeas (drained and rinsed)
- 1 handful fresh cilantro
- flour (your choice for dusting)

- 3 Tbsp. tahini
- 2 Tbsp. almond milk
- 1 tsp. seasoning (Za’atar, or sub Herbs de Provence)
- 1 lemon
- salad
- 1 head iceberg lettuce (roughly torn and rinsed)
- 1/4 cup pitted green olives (halved)
- 1/2 cup cherry tomatoes (halved)
- 1 zucchini (shaved in ribbons, use a potato peeler!)
- 1/2 cup pea shoots (or other sprouts)
