- vegetable oil (for frying)
- 1/4 cup oil (canola, olive, safflower, or grapeseed)
- 2 Tbsp. lemon juice (or 1 small lemon)
- 1/4 cup plain yogurt
- 1 tsp. granulated sugar
- 1 Tbsp. apple cider vinegar
- 1 dash salt
- 8 cups romaine lettuce (chopped)
- 1 pt. cherry tomatoes (halved)
- 1 cucumber (sliced)
- 1/2 onion (sliced)
- 2 Tbsp. capers (drained)
