- 1 carrot (peeled and julienned)
- 1/2 cucumber (peeled and julienned)
- 5 romaine (cut in half)
- 1 oz. rice vermicelli (cooked, rice noodles)
- 20 cooked shrimp (medium, sliced in half)
- 1/4 cup peanut butter
- 1 Tbsp. hoisin
- 3 tsp. soy sauce
- 2 Tbsp. rice wine vinegar
- 2 Tbsp. honey
- 1 tsp. sesame oil
- 1 tsp. minced garlic
- 1 tsp. chili sauce
- 2 Tbsp. water
- peanuts (chopped, for serving)

One of my favorite things I've ever made! So easy because it's basically just assembly once the ingredients are prepped for the rolls. These are also REALLY impressive to make for friends. I added some extra Sriracha to the peanut sauce because I like more spice :) The rolls are so fresh tasting too!!
