- 1.4 oz. fajita seasoning (divided)
- 4 chicken breast halves (skinned and boned, cubed)
- 3 Tbsp. vegetable oil (I use olive oil when I do fry the chicken)
- 1 onion (medium, chopped)
- 1 tsp. minced garlic
- 15.25 oz. green peppers (whole kernel corn with red and, drained)
- 15 oz. black beans (rinsed and drained)
- 14.5 oz. stewed tomatoes (Mexican-style)
- 4.5 oz. green chiles (chopped)
- 3 cups water
- 1 cup instant brown rice (uncooked)
- 2.25 oz. ripe olives (sliced, optional-but good!)
- 10.75 oz. cheese soup (condensed nacho, I used cheddar cheese soup)
- 3 Tbsp. chopped fresh cilantro
- 1 Tbsp. lime juice (I squeezed half a lime)
