- 2 lb. potatoes (I used Yukon gold)
- 1/2 cup unsweetened almond milk
- 2 Tbsp. olive oil
- salt
- pepper
- 1 Tbsp. olive oil
- 1 onion (large, chopped)
- 2 cloves minced garlic
- 2 large carrots (quartered and sliced)
- 2 stalks celery (some leaves ok too, sliced)
- 8 oz. mushrooms (sliced)
- 1 cup asparagus (sliced in 1 inch pieces)
- 1/2 cup green beans (cut in 1 inch pieces)
- 1 fresh corn (cut off the cob)
- 2 cups baby spinach leaves (packed)
- 15 oz. kidney beans (drained and rinsed)
- 1 1/2 cups vegetable broth
- 2 Tbsp. tamari (soy sauce or coconut aminos)
- 1 1/2 tsp. thyme
- 2 tsp. fresh rosemary (minced, or 1 tsp. dried)
- 1/4 tsp. sage
- 1 Tbsp. cornstarch (add more as needed to thicken)
- 2 Tbsp. water (or veg. broth)
- salt (to taste)
- pepper (to taste)

Love it adn and recommended!! I added vegan butter to my mashed potatoes and vegan parmesan cheese and nutmeg.

My whole family loved this! I added a few extra veggies I had in my fridge, and used spelt milk in the potatoes. Great mix of spices - thanks for the recipe!
