- 1/3 cup mascarpone cheese (softened to room temp)
- 2 cups red pasta sauce (I used a basil-infused sauce)
- 2 oz. Parmesan cheese (finely grated)
- 8 oz. mozzarella cheese (finely grated)
- 1 Tbsp. parsley (fresh Italian flat-left, or fresh basil, finely minced for garnishing, optional)

I made this a few days ago and LOVED it. Couldn't find marscapone so I used cream cheese and added in as much Parmesan and mozzarella as I wanted. Can't wait to make it again. My picky husband enjoyed it as well!
